The Three Sisters – Preservation and Safety (HS)

Food preservation is any process that reduces or prevents the deterioration of a food. Food deterioration is
caused by a number of factors but can generally be grouped into several categories. These categories
include microbial, biological, biochemical, chemical and physical. From a microbial perspective, the
elimination of spoilage organisms is the major target for preserving a food.
